This bar took me home to Sri Lanka, each taste brought back a memory : eating mango with salt and chili, mango mousse with condensed milk ( I couldn’t eat that now it would be too sweet) the chocolate however wasn’t. It was beautifully balanced with notes of pineapple, mango, wild blossom honey and cinnamon. The spice warms the palate with a little kick but never overwhelming just a lovely juxtaposition of flavours, the end is gentle and citrusy; blood orange and mandarin, creamy texture is so lovely – what a bar!!
