More to chocolate
There must be more to chocolate? Since then my chocolate journey has taken me to becoming a Level 3 certified chocolate taster with the International Institute of Chocolate and Cacao Tasting, chocolate educator, and now a self-taught chocolate maker and one of very few bean-to-bar makers in Devon. I can confidently tell you that there is most certainly more to chocolate!
I make my chocolate in micro-batches of 3kg or less, in a tiny chocolate factory in Exeter, with great care at every step to nurture and bring out the flavour of the beans. Each bean has a unique flavour profile, my job is to allow this to shine in every single batch. The process begins with sourcing fabulous quality cacao. Flavour is always at the forefront of my decision making. I use my experience with chocolate tasting and cacao evaluation to select the beans that offer an outstanding flavour profile.
You only need two ingredients to make great chocolate – cocoa beans and sugar. In my bars you will only find natural and simple ingredients which deliver and enhance the unique flavour and personality of each bean.
My cocoa beans are selected for flavour from a speciality cacao importer, working closely with cocoa farmers to create relationships based on respect, trust and transparency. Together we’re working towards a better future for chocolate.
