The Oldest Chocolate-Maker in Paris
À la Mère de Famille produces thousands of different products, almost all of which they manufacture themselves. Although the Dolfi family adore their florentines, rum babas, Négus (caramels), Palets Or (ganache) and praline chocolates, what they really love is being surrounded by men and women who are as talented and passionate as they are. Chocolatiers, bakers, confectioners, ice-cream and macaron makers and kitchen staff who, collectively, help produce their vast range of sweet products.
À la Mère de Famille makes its chocolates in its factory in Chambray lès Tours where it can be close to its shops and draw on the local expertise; but the manufacturing unit, where its home-made recipes and expertise are constantly honed, also consists of three other production plants (bakery and confectionery).
The À la Mère de Famille approach is characterized by the direct sourcing and strict selection of all raw materials, throughout the entire bean to bar process. For the Dolfi family, the proud owners of the company, it is impossible to promote and enjoy traditional confectionery here in France without also considering production conditions elsewhere.
