Suitable for makers new to roasting cacao for bean to bar, and pro makers looking to deepen their understanding of roasting & sharpen roasting skills
You’ll learn:
How and why roasting skills are essential to crafting outstanding chocolate flavor The role of volatiles in creating aroma and flavor and where origin flavor comes into play A chocolate tasting comparing different roast results, and the profiles used to achieve the flavors The essentials of profile roasting and how using a profile achieves flavor goals Hands-on roasting on a 6kg San Francisco Roaster (each student gets to choose from an arrayt of origins, and roasts with the guidance of a chocolate maker). How to use data-tracking software to repeat or improve roast results Post-roast cooling, cracking and winnowing, and storage methods Students have the option to roast, winnow and take home their cacao nibs How it works
- In-person! A full day of roasting lessons and insights, and hands-on roasting in Huntersville, North Carolina (suburb of Charlotte), co-taught in the chocolate kitchen and roastery of Nostalgia Chocolate
- August 2024; choose from August 16 or August 17. Class is from 8am until 5pm, with a ½-hour lunch break
- Everyone gets to roast with a guide by their side
- Includes digital download of Cacao Roaster’s Guide
- Travel and lodging are not included
- Space is limited
